Thank you very much indeed for the info about Alicia √ we all are very sorry !
How old was she ? Whole our forum is ⌠strongly distressed■ upon the news of her death.

Unfortunately most of us do not even know English, therefore ⌠to establish russo-polish contacts■ I want to ask couple of questions, which interest Russian fans :

1. Is there any e-mail ID, where Joanna Chmielewska answers to correspondence?

2. I want to know exactly, in what sequence one should put the ingredients while cooking the Bigos ? Since the recepies available are bit brief.

3. I would like to know how to cook <<fliaki>> too ? They were mentioned quite a few times, but in general.

I also hope that there won▓t be any break in our communication, which is just begun and there would be somebody who knows both languages equally well.

Thank you in anticipation.

Unfortunatelly not. She isn't using the Internet.

Firstly You have to simmer cabbage. Then fry meat on a frying pan, and add it to the cabbage. After it you can add some mushrooms, plums, a little wine ;-) etc :)

I don't know how to make flaki, so maybe someone else will help you :)

one important thing - if you want to mix sauerkraut and regular cabbage - you should cook it separately at the beginning (I mean sauerkraut separately from the rest) - and add it later.

as t o flaki - we should ask chaber, and translate it into english :) she probably will know best :)

Flaki:
- 2 kilos of beef flaki
- 2 carrots
- 2 parsleys
- 1/2 of a big celery
- 2 big leeks
- 5 decagramme of butter to make brown flour and butter
- 4 decagramme of flour
- 1 scoop od chop onion
- 1/4 teaspoon of ground ginger
- 1/4 teaspoon of ground nutmeg
- some pepper und allspice
- 2 bay lea leaf
- 1 spoon of marjoram

1. Brush flaki in the water
2. Boil them for about 15 minutes and then pour out the water from the pot.
3. Pour the boiling water or better beef broth to the pot with flaki and boil for about 4 hours (Flaki shold be soft at all)
4. Chop them in to small belts (like a spaghetti) and put them again into the pot with broth (there shouyld be about 3 liter of broth in the pot)
5. Simmer vegetables in another pot with 1 tea spoon of butter and some water. When vegetables are ready, add to flaki
6. Make a brown flour and butter (fry butter, flour and very tinny-chop onion). Firstly simmer onion with butter, then add flour and broth to it.
7. Pour it into the pot with flaki and stir. Add some spices (as much as you want to)
8. Boil it for about 15-20 minutes.

You can eat it with breador loaf :)

As you see, it takes a lot of time to make it. I don't know how is it in Russian, but in Poland you can buy flaki that are ready to eat - you only have to heat them up :)
